这个周末,我又想吃砂锅鱼头汤了。于是,便和妈妈一起去菜市场买回一条体形肥硕的大花鲢。
到家后,妈妈刮了鱼鳞,清理了内脏,里里外外,认认真真地清洗一番,一切准备就绪,我就仔细地观察起妈妈制作鱼汤的过程了。只见她先切鱼头,从大约鱼腮五、六厘米处开始用劲剁,把鱼头与鱼身分开;然后往炒锅里放油,烧到四、五分热时,把鱼头放进去,煎到两面都呈金黄色,捞出,放入砂锅,兑冷水,使水没过鱼头;接着,用大火煮沸,再用文火细细地煨,并放入佐料,将汤熬到像牛奶一样的乳白色时,鱼香味也就随之散发出来了。再把事先准备好的“白胖小子”——豆腐块、轻薄如纸的笋片、乌黑铮亮的木耳,好似朵朵小伞的蘑菇,几乎透明的`白萝卜片……一股脑丢进砂锅里。起锅前再放入一些宛如翡翠的“小娃娃头”——青菜芯儿,最后,再撒些青蒜末,炖开后,一锅色香味俱全的江南名吃——砂锅鱼头汤就大功告成了!
妈妈在饭桌上垫上竹垫板儿,把这一大锅汤端上来。我洗净手,抄着筷子,掀开锅盖,一阵白“雾”扑面而来,一阵浓香扑鼻而来,一锅色香味俱全的珍馐扑我而来!吃一口鱼肉,肥而不腻;喝一口鱼汤,鲜而不腥,又热又爽,一个字:绝!
这道砂锅鱼头汤,荤素搭配,富含大量蛋白质与钙质,很容易被人体所吸收。况且,它味道鲜美,我从小就视它为最喜爱的菜肴之一。
鱼头中的精华部分当数鱼脑。它无色透明,呈黏稠状,只要轻轻一吸,就能顺势滑到嘴里,令人回味无穷。鱼脑有丰富的卵磷脂,说是能补脑,于是,家里每次吃鱼头汤,这鱼脑总是非我莫属。

青椒牛柳十分美味可口,吃到嘴里,十分爽滑,油而不腻,还带着一丝丝青椒的辣味和涩味。每吃一口,都会尝到牛肉那细腻的味道和青椒那扑鼻的气味。于是,牛柳的味道,成了我喜欢它最主要的原因。
青椒牛柳不仅味道很好,而且香味也让我十分喜欢。青椒牛柳的气味很香,结合了青椒和牛柳的气味,弥补了两者的'缺点,改进了优点,那气味,只要一进你的鼻子,就好像灌入了你的全身,闻了就让人食欲大增,很想吃。
青椒牛柳的样子也不差,一盘牛肉之中,很有规侓的穿插着几根绿青色的青椒,活像是一座有绿由黄的美丽的大山,让人就算是不尝不闻,也十分想吃。
青椒牛柳很好吃,那自然做起来就非常需要技术。而我,尤其喜欢吃妈妈做的青椒牛柳,因为妈妈的厨艺很好。妈妈总是先拿出新鲜的牛肉,然后把牛肉切成一条一条的牛柳,然后在锅里撒上油,把牛柳倒进去,之后,在巴西好的青椒也倒进去,和牛柳一起爆炒,炒的过程中再适当加点水。快炒好了,就再放下豆瓣酱酱油和专门的酱,再炒一下,就出锅了。
怎么样,青椒牛柳是不是很美味?这就是我最喜欢的食物----青椒牛柳,因为它色香味俱全。
