大街小巷,菜市场旁有很多麻辣烫的摊子。一辆有蓬的小车上,放一个炉子,炉子上放一个大大的钢桶,里面装大半桶汤水,热气腾腾。车上放有几十种菜品,有荤有素,任你挑选。车旁放两、三张小桌子,十几张小凳子。你要是走累了,坐下来歇一会儿,品尝几样自己最爱吃的麻辣烫,立刻会使你神清气爽。
麻辣烫的确是辣,吃过后让你觉得嘴唇麻麻的,名不虚传。看,大碗里盛满漂着油花、葱花的汤,汤里泡着亮晶晶的.粉丝,粉丝裹着白菜。红红的火腿肠,碧绿的香菜,金黄的油豆腐,五彩缤纷。把鼻子凑上去闻一闻,那香辣味直冲脑门儿。我一看,口水直往肚里咽,连忙拿起筷子猛吃起来。

据说,麻辣烫起源于长江之滨,最初的时候,是船工和纤夫创造出来的吃法。从四川宜宾到三峡的巫山,这一带水流湍急,行船的纤夫们拉纤之余,就在江边垒起几块石头,支起瓦罐,舀几瓢江水,拾些干柴生火烧。在罐里加入蔬菜,没有蔬菜就就地取材,拔些野菜,放人海椒、花椒等调料,涮烫一下就吃。吃后滋味美不可言。后来,码头上的小贩见这种涮烫方式有利可图,便将菜品和炉具加以改造,置于挑担两头,边走边吆喝,路人纷纷围着担子享用起来。
麻辣烫渐渐从江边上了岸。现在麻辣烫更是因为方便、自助、快捷的优点,迅速名扬大江南北,成为大众喜闻乐见的小吃。
