关于信阳毛尖，有这么一个传说。它开始种植在鸡公山上，叫“口唇茶”。这种茶沏上开水后，从升起的雾气中会出现九个仙女，一个接一个飘飘飞去，品尝起来，满口清香，浑身舒畅，能够医治疾病。这种口唇茶原是九天仙女种的.，她们怎么会来到人间茶呢？这事还得从鸡公山谈起。先前，鸡公山没有名字。有一年，山上害虫成灾，不知从哪里飞来一只神鸡，把害虫叨个一干二净，住了下来。它天天报晓，啼叫一声，响遍天下，因此人们就给这座山起名鸡公山。各种害虫再不敢在这里逞凶了，鸡公山上从此草绿树旺，鸟语花香，成了人间仙境。

信阳毛尖的采摘已经有数百年的历史。每年清明节过后采摘，茶汛便开始了。

阳春三月，茶芽开始萌发，“清明节”过后开始采摘，“谷雨”前普遍开采。春茶采摘时间为40天左右，五月底以前采的为春茶，也叫做“头茶”，开采的头两天，数量很少，称之为“跑山尖”，多在“谷雨”前采制也称为“雨前毛尖”。

把细嫩的嫩叶芽均整，炒制一公斤的信阳毛尖需十万多芽头，接着开始炒，渐渐地，你会问道一种香气扑鼻的味道，这时茶叶不焦、不断，可香气扑鼻了。

夕阳西下，在院中摆上一张桌子，取一套茶具，倒上刚刚烧开的温开水，分别放一小撮信阳毛尖，轻轻抿上一口，可真是爽啊，真是让人回味无穷啊！那种香气也会传向世界的四面八方。

信阳毛尖以它的香、味，取得了上万人的爱戴，这十大名茶之一的信阳毛尖，可真不愧是十大名茶之一。
