北京烤鸭的制作过程很简单，选用的事优质品种的北京鸭。首先，要在鸭子身上开一个小洞，取出内脏，往鸭肚中加入开水，然后再将鸭子挂在烤炉上，这样既可以让鸭子的水分不流失，也可以使鸭子不被烤软，可谓一举两得! 稍等片刻后，将鸭子取出。只见刚出炉的鸭子还冒着热气，外焦里嫩，还略带一丝果香味。只有用这种烤法做出来的才是正宗的北京烤鸭。
