Dumpling is a traditional Chinese food. On the lunar New Year' s Day, most families make a lot of delicious dumplings. To make them, follow this easy process.
The first step is to mix the flour with water. When the dough is ready, we can begin to make dumpling wrappers. We use a rolling pole to roll the dough into small, thin and round pieces so that they will be easy to cook. When the wrappers are done, it' s time to prepare the filling.
Usually, we use meat such as beef or mutton, and some vegetables such as cabbage or carrots for filling. You may actually choose whatever you like to put into it. We must chop those things into small pieces. Then put some salt, oil and other condiments into it and stir it evenly. When all these preparations are done, we can start making dumplings.
First put a spoonful of filling in the center of the wrapper. Then stick the two opposite sides together and then the rest. Don' t just cover the filling with the wrappers. The best shape of dumplings is that of a ship, because when they are boiling in the pan, they look like ships sailing in the sea. The smell can make your mouth water.

我拿出那包北方饺子，跑到厨房里。迫不及待地饺子放到锅里，再把锅端到水龙头下面，接满一锅水，又小心翼翼地把锅端到煤气灶上，打开阀门点燃火，就安心地做作业去了。过了一会，我又跑到厨房里，揭开锅盖，只看见锅里的饺子全躺在水下，和刚倒进锅里的饺子没什么两样，只是水变浑了。肯定没熟，盖上锅盖继续煮吧。做完数学作业，再次跑到厨房里，这回该熟了吧?揭开锅盖一看，吓了我一跳——锅里的饺子全都破了，水也干了。唉，这哪是饺子啊，完全是一锅羹。妈妈看到了肯定会骂我的.?这是怎么回事?我是哪儿做错了?
这时妈妈从床上下来了，她问我：“怎么了?”我低着头很不好意思地把刚才的事说了一遍，等待着妈妈的责骂……“你这小笨蛋，”妈妈摸着我的头说，“煮饺子应该先把水烧开，再下饺子;等煮开后，就点一点儿凉水，盖上锅盖，再次煮开。得点三次凉水，最后一次烧开后，饺子就会浮在水面上，这时的饺子就可以捞起来吃了。”我看着妈妈憔悴而又慈祥的脸，眼泪再也忍不住了……
我按照妈妈的话把剩下的饺子煮了，饺子终于煮熟了，一个个晶莹剔透，象一只只白色的小帆船漂浮在水面上……我连忙把饺子盛在碗里，端给了妈妈。妈妈说：“你真是个能***小笨蛋!”

在我家乡，有一个每家每户都保持的的传统，那就是包饺子。我们通常会在除夕当天包饺子、吃饺子。我们擀面皮，准备饺子馅儿，然后就可以开始包饺子了。
在包饺子时，一定要做的一件事就是把硬币放在一些饺子里，谁能吃到馅里有硬币的饺子意味着在新的一年里好运连连。最后一步就是煮饺子，这时候，所有人都在等饺子出锅。对于我们来说，饺子就是我们最好的年夜饭。
