“哇！”只见厨师利索地打开炉门，准备装鸭。这种烤法叫全聚德，不直接开膛破肚，而是先在鸭的心脏部位开个小洞，把里面的`东西掏出来，再往鸭子的洞里塞上佐料和独家秘制的香精，将小洞系上，然后挂在炉内烤上一段时间。
出炉了！鸭子的香味钻入了我的心田。只见那鸭身黄灿灿的，厨师抓了一把青翠欲滴的香菜放在烤鸭上面。然后抓两把紫花装点，把熬好的酱汁浇在上面，最后切成块。整个动作一气呵成，无可挑剔。

北京烤鸭的制作过程很简单，选用的事优质品种的北京鸭。首先，要在鸭子身上开一个小洞，取出内脏，往鸭肚中加入开水，然后再将鸭子挂在烤炉上，这样既可以让鸭子的水分不流失，也可以使鸭子不被烤软，可谓一举两得! 稍等片刻后，将鸭子取出。只见刚出炉的鸭子还冒着热气，外焦里嫩，还略带一丝果香味。只有用这种烤法做出来的才是正宗的北京烤鸭。
吃北京烤鸭的时候，我喜欢配上一点甜面酱，将其抹在荷叶饼上，在放入几片鸭肉，然后放些萝卜丝和葱条，将大饼卷起，放入嘴中轻轻一咬，唇齿留香，回味无穷!萝卜与大葱带来的清香劲儿使烤鸭的味道得到了升华，我边吃边说：“好吃，好吃!” 北京烤鸭不仅色泽鲜亮，而且口味甚佳，不愧为享誉世界的美味佳肴。
