最近，各餐饮单位要依照《食品卫生法》及《餐饮业和集体用餐配送单位卫生规范》进行自查。特别是要加强食品原料采购的管理，所够进的直接入口食品、生的畜禽兽肉要从正规渠道购入，并索取购货凭据及食品卫生许可证、检验（检疫）证明，用时要加强对入口食品容器、工具及餐饮具的消毒，认真检查是否冷、荤、凉菜制作的管理。从业人员要有健康体检证明，患有规定“五病”者一律不准上岗从业。集体食堂、送餐单位要认真做好餐具、饮具的消毒及食品加工制作、原料采购索证管理。提供“年夜饭”的餐饮单位要于年前在卫生监督所备案。县城餐饮业单位承办100人以上、农家乐50人以上的集体聚餐应向县卫生监督所报告并对凉菜实行24小时留样备查（乡镇餐饮业单位承办50人以上集体聚餐，向乡镇卫生院备案）。要抓好卫生管理制度的落实工作，以防止食物中毒和食源性疾病发生。
